Ingredients
  

  • 1 cup Moong Dal
  • 4 cups vegetable broth
  • 2 cups spinach, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp cumin powder
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Lemon juice for garnish

Method
 

  1. Rinse the Moong Dal and set aside.
  2. In a pot, heat olive oil and sauté onions and garlic until fragrant.
  3. Add the Moong Dal and vegetable broth. Bring to a boil, then simmer for 20 minutes.
  4. Stir in the chopped spinach and cumin powder. Cook for another 5 minutes.
  5. Blend the soup until smooth, season with salt and pepper, and serve with a squeeze of lemon juice.
