Method
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix Dijon mustard and honey. Brush the mixture over the salmon fillets.
- Press the crushed pumpkin seeds onto the top of the fillets
- Heat olive oil in a skillet over medium heat. Sear the salmon for 2-3 minutes on each side, then transfer to the oven and bake for 10-12 minutes.
