Ingredients
  

  •  4 medium potatoes, peeled and diced
  • 2 cups fresh spinach
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 cup feta cheese, crumbled
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté the diced potatoes until tender.
  3. Add spinach and cook until wilted.
  4. In a bowl, whisk together eggs, milk, salt, and pepper. Pour over the potato and spinach mixture.
  5. Sprinkle feta cheese on top and bake for 20-25 minutes until set.
