Ingredients
  

  • 1 can (400g) chickpeas, drained and rinsed
  • 2 cups fresh spinach
  • 1 can (400g) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp cumin
  • 1 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. In a pot, heat olive oil and sauté onion and garlic until translucent.
  2. Add diced tomatoes, chickpeas, cumin, salt, and pepper. Simmer for 10 minutes.
  3. Stir in fresh spinach and cook until wilted.
