Ingredients
  

  • 2 large bell peppers
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cooked brown rice
  • 1 tbsp olive oil

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix spinach, feta, brown rice, olive oil, salt, and pepper.
  4. Stuff the mixture into the bell peppers.
  5. Place in a baking dish and bake for 25-30 minutes until the peppers are tender.
