Ingredients
  

  • 2 salmon fillets
  • 1/2 cup pumpkin seeds, crushed
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Olive oil for cooking

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix Dijon mustard and honey. Brush the mixture over the salmon fillets.
  3.  Press the crushed pumpkin seeds onto the top of the fillets
  4. Heat olive oil in a skillet over medium heat. Sear the salmon for 2-3 minutes on each side, then transfer to the oven and bake for 10-12 minutes.
