Ingredients
  

  • 1 can (400g) chickpeas, drained and rinsed
  • 1 medium sweet potato, diced
  • 1 can (400ml) coconut milk
  • 1 cup vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tbsp olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Method
 

  1. In a pot, heat olive oil and sauté onion and garlic until translucent.
  2. Add diced sweet potato and curry powder, cooking for 2-3 minutes.
  3. Pour in coconut milk and vegetable broth, then add chickpeas.
  4. Simmer for 20-25 minutes until the sweet potatoes are tender.
  5. Garnish with fresh cilantro before serving.
